Homemade deer snack sticks taste better than any other snack bought from a store. Making this snack is easy and much healthier than other snacks. At this time of the year, we get to empty the previous season venison from the fridge and use them to make snack sticks. These snacks are made with ingredients and varieties of flavor which are in our kitchen and is less expensive.

Preparation Steps

l Step 2: cut the Venison(Meat) into cubes and grind the meat using a grinding plate. If you want to blend with another type of ground meat, combine the meats together using your hands, knead and squish the meats with your hand or fingers. Using the hands is a more effective way of getting a good mix, you could also wear plastic gloves.

l Step 3: add curing salt and seasoning. Using your hand, mix with the meat for at least 5 minutes. Add clean water (10 lbs. of meat = 1 lb. of water) stir and mix thoroughly. For a more flavored meat, put the mixture in a plastic tub and place in a fridge for 12 – 24 hours.

l Step 4: remove meat from tub inside the fridge. using a small plate, grind the meat mixture. This will make the meat have proper consistency and better texture. If you want to add any flavor, add it now and mix with hand for 3 minutes.

l Step 5: The next step is to stuff the Jerky Gun with the mixture. Fill the gun with the mixture and Place the casing over the nozzle of the Jerky gun and tie the end. To provide resistance hold the casing and ask your, partner, to click the gun. This makes the meat flow into the casing. If the casing has reached your desired length, twist the casing first and then tie the end. Continue this process till all the meat has been stuffed into the casing.

l Step 6: the snacks can be cooked using an Oven or dehydrator. For a dehydrator, load the snacks sticks onto the dehydrator trays and set the temperature to 155 degrees Fahrenheit. When they are cooked, allow drying for 8-10 hours to become the texture of a snack stick instead of sausage. Test to ensure you like them, when satisfied with texture and flavor, store in zipped plastic bags in the fridge.
